There's no other meal that pairs as well with pancetta and the comforting sensation of freshly made tagliatelle. This recipe's simple components serve as proof that simple things done well may be just as enjoyable as sophisticated ones. Tagliatelle is boiled first to give it a lovely al dente texture. Diced pancetta is fried in a skillet until crispy and brown, releasing fat, while the pasta cooks. To infuse the oil and pancetta with the essential scents, chopped garlic is also added to the pan.

Step 1
Cook the Tagliatelle: Add enough water into a large pot and season with salt to a boiling point. Boil the tagliatelle in salted water, as per the instructions on the pack, stirring occasionally until properly cooked. Set aside a cup of pasta water and then dry the pasta well.
Step 2
Prepare the Sauce: To prepare the dish, add olive oil to the skillet and turn on the heat to medium. Crumble the pancetta then fry in the pan until crisp, this will take between 5-7 minutes.
