Steps

Step 1

Cooking the quinoa: Wash the quinoa underneath cold water to get rid of any bitter residue. In a medium saucepan, combine washed quinoa and water. Bring the water to a boil on a high flame, then reduce the temperature to low and cover the pot. Boil the quinoa for 15 minutes, till all of the water is absorbed and the quinoa is soft. Remove the pot from the heat and let the quinoa cool to room temperature.

Step 2

Prepare the veggies and herbs: While the quinoa is cooking, put together the greens and herbs. Cut cucumber and tomato into small pieces. Finely chop sparkling parsley, mint, and onion.
