Step 1
Firstly, you will heat the oven to 180C/160C fan/gas 4. Then you will lightly grease and line a 20-22cm square or rectangular baking tin with a lip of at least 3cm. To make the shortbread, you will mix 250g plain flour and mix 75g caster sugar into a bowl. Then rub in 175g softened butter until the mixture resembles fine breadcrumbs. Then you will knead the mixture together until it forms a dough, and then press it into the base of the prepared tin.
Step 2
Prick the shortbread lightly with a fork. Then you will bake for 20 minutes or until firm to touch and very lightly browned. Then you will leave it to cool in the tin. To make the caramel, you will put 100g butter or margarine, 100g light muscovado sugar and then put the can of condensed milk in a pan. You will then heat gently until the sugar has dissolved. You will then continually stir with a spatula to make sure that no sugar sticks to the bottom of the pan.
