First, beat the eggs and season with salt and pepper in a bowl. Next, place one tablespoon of vegetable oil in a pan and heat it over medium heat. The beaten eggs should then be added to the pan, swirling the mixture to make a thin omelette. Cook till done, then take out of the pan and reserve.

Next, add one more tablespoon of oil to the same pan. The cabbage, carrots, green onions, and bean sprouts should all be sautéed until just tender. Add the chicken or prawns, if using, and cook until done. The cooked omelette should then be added, broken up into small pieces, and stirred in with the sesame oil and soy sauce. Blend thoroughly.
