Firstly, you will preheat your oven to 400°F (200°C). Secondly, place the cubed butternut squash on a baking sheet. Then drizzle 1 tablespoon of olive oil. Season with salt and pepper. Roast the butternut squash in a preheated oven for 25-30 minutes or at least until it becomes more tender and slightly caramelised.
Step 2
In a large pot, make sure to heat the remaining tablespoon of olive oil over medium heat. Then you will add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.Then add the roasted butternut squash to the pot along with the vegetable broth, the dried thyme and the ground cumin. Stir well to combine. Then you will bring the soup to a boil making sure to reduce the heat to low. Then let it simmer for about 15-20 minutes. The flavours will meld together.
