Vegan Stuffed Mushrooms

These vegan stuffed mushrooms are a great way to start the meal or as a side. They’re simple to make and burst with flavor. The earthy flavor of the mushrooms is wonderfully complemented by the savory filling made of breadcrumbs, garlic, and onions.

Steps

Step 1

Preheat your oven to 375°F (190°C). Clean the mushrooms and remove the stems. Set the mushroom caps aside. Finely chop the mushroom stems. Heat one tablespoon of olive oil in a pan over medium heat. Add the chopped stems from the mushrooms, minced garlic, and chopped onion. Cook for 3–4 minutes, or until the edges begin to get tender. Take out of the heat.

Step 2

In a mixing bowl, combine the sautéed mushroom stem mixture, breadcrumbs, fresh parsley, and the remaining tablespoon of olive oil. Season with salt and pepper, and mix well to create a stuffing mixture. Take each mushroom cap and firmly pack the breadcrumb mixture inside. Press down gently to ensure the filling sticks.

Step 3

Place the stuffed mushrooms on a baking sheet or in an ovenproof dish. Bake for 15 to 20 minutes in a preheated oven, or until the stuffing is golden brown and the mushrooms are soft.

Step 4

When cooked, take the mushrooms out of the oven and allow them to cool for one minute before serving. Garnish with additional fresh parsley if desired. Serve your veggie-stuffed mushrooms as a tasty side dish or appetizer.
