Steps

Step 1

In a mixing bowl, combine the finely chopped napa cabbage, mushrooms, grated carrots, minced garlic, and optional minced ginger. Add the soy sauce, sesame oil, and black pepper to the vegetable mixture. Stir well to combine all the ingredients thoroughly.

Step 2

Lay out one vegan dumpling wrapper at a time. Place a teaspoon of the prepared filling in the center of the wrapper. Moisten the edges of the wrapper with water to help seal the potstickers. Fold the wrapper in half to create a semicircle, then pinch and pleat the edges to seal the potsticker. You can choose to create different pleat designs for added flair.

Step 3

Heat a non-stick pan over medium-high heat and add a small amount of cooking oil. Once the oil is hot, arrange the potstickers in the pan, ensuring they don't touch each other. Cook until the bottom is golden brown, which will take about 2-3 minutes. Add about 1/4 cup of water to the pan and immediately cover with a lid. This creates steam to cook the potstickers. Cook for 5-7 minutes or until the wrappers are translucent and the filling is cooked.

Step 4

Remove the potstickers from the skillet and serve with your favorite dipping sauce, such as soy sauce or a mixture of soy sauce, vinegar, and chili oil.
