A delicious plant-based take on the traditional pesto pasta is vegan pesto spaghetti. This recipe is very tasty and fresh, and best suited for both category people vegans and non-vegans. It is dairy-free and creamy pesto which is made with basil.

Steps

Step 1

Fresh basil leaves, walnuts or pine nuts, garlic, nutritional yeast, lemon juice, salt, and pepper should all be combined in a food processor. Add the extra-virgin olive oil little by little while pulsing the items. Process the pesto until it gets the consistency you want. Taste and adjust the seasoning.

Step 2

Cook the vegan pasta according to the package instructions until it's al dente. Drain and set aside.

Step 3

In a large mixing bowl, combine the cooked pasta, cherry tomatoes, baby spinach or arugula, black olives, and red onion (if using). Add the vegan pesto to the bowl and toss everything together until well coated.

Step 4

Divide the Vegan Pesto Pasta into serving bowls. If desired, sprinkle red pepper flakes and vegan parmesan or nutritional yeast on top for added flavor and heat.
