Vegan Banana Pancakes

Since no animal products are used in the preparation, these light and tasty pancakes are appropriate for vegans and others following certain dietary instructions. Ripe bananas, the main component, naturally sweeten and moisturize the pancakes without the need for dairy or eggs.

Step 1

Firstly, you will get a large bowl and whisk together the flour, the baking powder and the salt.

Step 2

Then, get a separate bowl, mix the mashed banana, plant-based milk, maple syrup, and vanilla extract.

Step 3

You will then pour the wet ingredients in with the dry ingredients. Then stir until it is just combined. Be careful not to overmix. A few lumps are okay.

Step 4

Then you will heat a non-stick skillet or griddle over medium heat. You will add a small amount of coconut oil or vegan butter to coat the surface.

Step 5

You will then pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Then you will cook until bubbles form on the surface, flip and cook for an extra 1-2 minutes, until golden brown.

Step 6

Then repeat with the remaining batter. Add more of the oil or the vegan butter to the skillet as is required.

Step 7

Serve the vegan banana pancakes warm with sliced bananas and a drizzle of maple syrup.
