Step 1

Firstly, you will need to use a large saucepan and make sure it is full of water and put it on to boil. Then you will finely chop the 100g pancetta, having first removed any rind. Then finely grate 50g pecorino cheese and 50g parmesan and mix this. Then beat the 3 large eggs in a medium bowl and season with a touch of grated black pepper. Then set everything aside.

Step 2

Then you will add 1 tsp salt to the boiling water, add 350g spaghetti and when the water has come to boil, cook at a constant simmer, covered, for around 10 minutes or until it is cooked well. Then you will squash 2 peeled plump garlic cloves with the blade of a knife. Fry the pancetta with the garlic as the spaghetti cooks. Then you will drop 50g unsalted butter into a large frying pan or wok and once the butter has melted, you will then tip this in the pancetta and garlic.

Step 3

Moreover, leave to cook on medium heat for 5 minutes making sure to stir often until the pancetta is a slightly golden colour and is crisp. Once the garlic has now shared its flavour in the dish, you will take it out with a slotted spoon and discard it. Make sure to keep the heat under the pancetta on low. When the pasta is ready, you will lift it from the water with a pasta fork or a pair of tongs and put it in the frying pan with the pancetta. Save the pasta water for later.

Step 4

Then you can mix most of the cheese in with the eggs, making sure to keep a small handful back for sprinkling over later. Then you can take the pan of spaghetti and pancetta off the heat. Then quickly pour in the eggs and cheese. Using tongs or a long fork, you will lift the spaghetti so it mixes easily with the egg mixture.

Step 5

Lastly, you will add extra pasta cooking water to keep it saucy (several tablespoons). You don’t want it wet, just moist. Then you will season with a pinch of salt if needed. Use a long-pronged fork to twist the pasta onto the serving plate or the bowl. Then you can serve with a little sprinkling of some cheese and a dash of black pepper. If the dish does get a little dry, you can add some more hot pasta water to the dish. Enjoy this meal.
