Udon Noodle Stir-Fry

A quick and flavorful dinner to make for one individual is this stir-fried udon noodle dish. Because it's so spiced, it's the ideal go-to supper when you're pushed for time but still want something delicious.

Step 1

As directed on the package, cook the udon noodles in a pot of boiling water until they are soft. After draining, place the noodles aside.

Step 2

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped bell peppers and mushrooms (in strips). Stir-fry for three to four minutes, or until they begin to soften.

Step 3

Toss in the cooked udon noodles and the sautéed vegetables in a skillet. Pour the soy sauce over the veggies and noodles. Stir-fry the noodles for a further two or three minutes, or until they are completely cooked and coated, after blending all of the ingredients.

Step 4

Give it one last toss after adding the cut scallions. Garnish with chopped cilantro or sesame seeds, if you like you can serve your hot stir-fried udon noodles.
