This scrumptious and simple-to-make recipe, Tomato and Mozzarella Stuffed Chicken mix the typical flavours of Caprese salad with juicy, tender chicken. It's amazing for a sufficient but light dinner.

Step 1

Set your oven's temperature to 375°F, or 190°C, to start. Then lay the chicken breast on a clean surface. With a sharp knife, carefully slice it in the middle horizontally, but not all the way through, creating a pocket for the stuffing. Season the inside and outside of the chicken with salt, pepper, and Italian seasoning.

Step 2

Place the mozzarella cheese slices and tomato slices inside the pocket you created in the chicken breast. Fold it over to encase the stuffing.

Step 3

Subsequently, place an oven-safe skillet over medium-high heat and add the olive oil. Add the filled chicken breast to the heated oil. Sear until beautifully browned, about 2 to 3 minutes per side.

Step 4

Transfer the skillet with the seared chicken to the preheated oven. Bake for about 15-18 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F or 74°C).

Step 5

Let the chicken sit for a while after withdrawing the skillet from the oven. This allows the juices to be redistributed. Serve your Tomato and Mozzarella Stuffed Chicken hot, garnished with fresh basil leaves if desired.
