Steps

Step 1

In a pot, bring the chicken or vegetable broth to a boil. Add the galangal or ginger slices, lemongrass, kaffir lime leaves, and shallots or red onion to the boiling broth. If you prefer a spicier soup, gently bruise the Thai bird's eye chili peppers and add them to the broth. Adjust the number of chilies to your desired level of heat. Simmer the broth for about 5-10 minutes to infuse the flavors. The longer you simmer, the spicier it will become.

Step 2

Add the shrimp to the simmering broth. Cook until they turn pink and opaque, which usually takes 2-3 minutes. Toss in the sliced mushrooms and tomato wedges. Cook for an additional 2-3 minutes or until the mushrooms are tender. Remove the pot from heat.

Step 3

Season the soup with fish sauce, lime juice, and sugar. Adjust these seasonings to your taste, adding more fish sauce for saltiness, lime juice for sourness, or sugar for balance. Remove the lemongrass, galangal or ginger slices, kaffir lime leaves, and bird's eye chili peppers (if you prefer a milder soup) from the pot. Ladle the Tom Yum Soup into a serving bowl, garnish with fresh cilantro leaves, and serve hot.
