On a hectic weeknight, try this simple Thai prawn curry recipe. Prepare this delectable meal infused with rich red Thai curry sauce in under 20 minutes.

Step 1

Firstly, you will heat the oil in a medium saucepan. Then tip in the onion and ginger and cook for a few mins until softened. Then stir in the curry paste, then cook for 1 minute more.

Step 2

Then pour over the chopped tomatoes and coconut cream. Bring to boil then leave to simmer for 5 mins. Add in a little boiling water if the mixture gets too thick this will thin out the mixture adding a little water.

Step 3

Then you will tip in the prawns, and cook for 5-10 mins or more depending on how large they are. Then serve alongside some plain rice and sprinkle with a little chopped coriander. Savour its delightful flavours.
