Steps

Step 1

Whisk together the green curry paste, coconut milk, soy sauce, brown sugar, fish sauce (if using), and lime juice in a bowl. Adjust the sugar and fish sauce to your taste preferences.

Step 2

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and sauté them until they are lightly browned on all sides. Remove the tofu from the skillet and set it aside.

Step 3

In the same skillet, add the last tablespoon of vegetable oil. When the garlic is aromatic, add the minced garlic and sauté for about 30 seconds. Add the green beans, red and yellow bell peppers, broccoli florets, and snap peas. Sauté the veggies for 3–4 minutes, or until they are crisp-tender.

Step 4

Pour the prepared Green Bean Stir-Fry Sauce over the sautéed vegetables. Stir to combine. If you're using tofu, add it back to the skillet and stir it into the sauce.

Step 5

Let the stir-fry simmer for 2-3 minutes, allowing the sauce to thicken and the flavours to meld. To taste, add salt and black pepper for seasoning.

Step 6

Serve the Thai Green Bean Stir-Fry over cooked rice or noodles. Garnish with fresh cilantro leaves and, if desired, crushed red pepper flakes for extra spice. Serve with lime wedges on the side.
