Steps

Step 1

Prepare Crust: Preheat oven to 350°F (175°C). Grease or line a 9-inch baking pan with parchment paper. Combine almond flour, melted coconut oil or butter, and stevia powder in a blending bowl. Stir until nicely mixed and crumbly.

Step 2

Press the mixture properly into the lower end of the pan to form a crust. Bake the crust inside the preheated oven for 10-12 minutes or till gently golden brown. Remove from the oven and permit to cool as you prepare the filling.

Prepare the cheesecake filling: In a big mixing bowl, mix softened cream cheese, stevia powder, and vanilla extract till smooth and creamy. Add the eggs, beating them properly. Gradually add the unsweetened almond milk and stir until it’s smooth and nicely mixed. Assemble and bake the cheesecake.

Step 4

Pour the cheesecake filling over the cooled base in the pan. Put the bread on the counter and tap to eliminate any air bubbles. Place the bread inside the preheated oven and bake for 45-50 minutes, or till the middle is nearly set but a little soft.

Step 5

Take away the cheesecake from the oven and enable it to cool entirely at room temperature. Once cool, place the cheesecake in the refrigerator for at least 4 hours to set.

Step 6

Prepare the strawberry topping: Combine sliced ​​strawberries, powdered sugar, and lemon juice in a saucepan. Cook over medium flame, stirring occasionally until the strawberries are tender, for about 5-7 minutes. Remove from flame and permit the strawberry topping to chill to room temperature.

Step 7

To serve the cheesecake: Once the cheesecake has cooled and set, carefully take it out of the pan. Pour the strawberry topping over the cooled cheesecake and spread it evenly. Divide the cheesecake into slices and serve chilled.
