Step 1

Chop the fresh spinach and crumble the feta cheese. After cracking the eggs into a bowl, thoroughly mix them. In a nonstick pan, heat the olive oil on medium heat. Add chopped spinach and sauté for 2-3 minutes until wilted.

Step 2

Pour the beaten eggs over the sautéed spinach. Allow the eggs to set around the edges. Top half of the omelette with crumbled feta cheese. Season with salt and pepper to taste. Gently fold the remaining omelette half over the contents.

Step 3

Continue cooking for an additional 2-3 minutes until the eggs are fully set and the feta is slightly melted. Slide the omelette onto a plate, cut it in half, and serve hot.
