Steps

Step 1

To prepare the bulgur: Rinse 1 cup of bulgur in cold water and drain nicely. Bring the water to a boil in a pan. Add the washed bulgur, lessen the flame, cover, and simmer for 10-12 minutes or until soft and all the liquid is absorbed. Remove from heat and let it relax, for 5 minutes. Fluff with a fork.

Step 2

Prepare the fish: Season the fish fillets on both sides with salt, pepper, and a pinch of paprika. Heat olive oil in a pot over medium flame. Add the fish fillets and fry till cooked and flaky, 3-4 minutes per side. Take the dish out of the pan and keep it aside.

Step 3

Prepare the pilaf: In the skillet, add a touch of extra olive oil if required. Fry the chopped onions till translucent, approximately 3-4 minutes. Add the minced garlic, floor cumin, and paprika to the pot. Cook for another 1-2 minutes until the dish is cooked properly and the aroma is strong.

Step 4

Mix and serve: Add the cooked bulgur to the pot together with the onion mixture. Stir well and keep it warm. Taste and add salt and pepper if you feel that salt is less.

Step 5

Place the cooked fish fillet on top of the seasoned bulgur pilaf. If favored, garnish with fresh coriander or parsley earlier than serving.
