A wholesome and nutritious quinoa veggie bowl that's quick to prepare perfect for a healthy and satisfying meal. This dish will work for individuals with Irritable Bowel Syndrome as it is high in nutrients yet simple to digest.

Step 1

Flush 1 cup of quinoa under cold water. In a medium saucepan, mix quinoa with 2 cups of water. Get to a boil, lower heat to low, cover, and steam for 15 minutes or until quinoa is cooked and water is absorbed—fluff with a fork and set aside.

Step 2

Preheat the oven to 200°C, or 400°F. Toss with chickpeas and mixed greens; add olive oil, cumin powder, and salt and pepper. They should be arranged in a single layer on the baking sheet.Vegetables need to be grilled for 15 to 20 minutes, or until their skins are tender and starting to get crisp.

Step 3

Pour cooked quinoa onto either of the serving bowls. Add the chickpeas and roasted vegetables on top.

Step 4

Drizzle with additional olive oil if desired. Decorate with fresh herbs like parsley or cilantro. Count a squeezing of lemon juice for added flavor.
