Step 1

Preheat your oven to 375°F (190°C).

Step 2

Combine pumpkin seeds, olive oil, salt, and black pepper in a food processor. Pulse until the mix forms a coarse crumb texture.

Pat the chicken breasts waterless with paper towels. Charitably coat each chicken breast with the pumpkin seed mixture, pressing it onto the surface to adhere.
