Step 1

Turn the oven on to 375°F, or 190°C. Slices of the baguette should be 1/2 inch thick. Arrange the cutlets onto a baking tray. Apply a thin layer of olive oil on every baguette slice and season with salt. Toast for 8 to 10 minutes, or until the edges are golden brown, in a preheated oven.

Step 2

While the baguette slices are still warm, generously apply a layer of goat cheese on each one after they have been toasted. Decorate each crostini with a generous amount of pomegranate seeds on top of the goat cheese. Pour honey on top of the crostini. The tastes of the goat cheese and pomegranate are enhanced by the honey's richness.

Step 3

Finally, top the crostini with finely chopped fresh mint. A burst of freshness and colour is added by the mint. Place the goat cheese and pomegranate crostini on a dish and serve right away. It's preferable to eat these crostini when the bread is still warm.
