Choose this healthy pasta supper after a workout. It's low in calories and fat, but it's high in flavour and full of fibre and calcium.

Steps

Step 1

Firstly, you will heat the oil in a large non-stick pan. Then add the onions, cover and cook for 5 minutes. Then you will remove the lid and cook for 5 minutes more. Make sure to stir frequently until softened. Then you will add the garlic, chilli flakes and paprika and stir briefly. Add a can of water and the tomatoes. Then stir in the bouillon and aubergine. Bring to a simmer, cover and cook for 20 minutes.

Step 2

Then you will cook the penne pasta in a pan of boiling water for around 12 minutes. Make sure to follow the packet instructions for cooking the penne pasta. You will then drain, reserving 60ml of the cooking water. To the sauce, add the cooked penne pasta. Make sure to toss well with the basil and a little of the reserved water if needed. Then you will spoon into two shallow bowls. Serve topped with the cheese and extra basil.
