Step 1

give a few pandan leaves a wash and chop. Process them in a blender with water, then sieve to get 1/4 cup of pandan juice.

Step 2

Put the pandan juice, coconut milk, sugar, cornflour, and a small amount of salt in a pot. Mix thoroughly with a whisk.

Step 3

Put the pot over medium heat and stir the contents all the time until they get thick. This will take maximum 5-7 mins.

Step 4

For added flavour, if preferred, add a small amount of vanilla essence. Blend thoroughly.

Step 5

Transfer the pudding mixture into a mould or serving dish.Letting it cool to room temperature and let set for optimum of two hours before preserving in the refrigerator.
