Mexican style egg's with pico de gallo

Description

A perfect budget friendly nutritious start to the morning with this tasty and easy to make mexican inspired breakfast. Pico de Gallo is a popular Mexican salsa. It is also known as “Salsa Fresca,” or “Salsa Cruda.” Leave out the jalapeno if you don't want the spicy kick. I like to make my own tortilla using ground masa and will show how to make those in another recipe, but to make this super simple I've used shop bought tortilla's cut with a cookie cutter.

Steps

Step 1

Gather your ingredients.

Dice your tomato, onion, jalapeno and finely chop your coriander.

Step 3

Mix it all together with seasoning and lime juice. Season to taste. Mash the avocado and add some lime juice.

Give your tortillas a quick brown in a dry pan. You don't have to cut yours into size but I thought It looked pretty.

Top Chef tip when poaching or wanting to have a nice shape of your eggs. Put it through a sieve to remove the surrounding liquid so the egg keeps it shape.

Enjoy! I like to add a garnish of some homemade hot sauce which I will add in future.
