Step 1

In a mixing bowl, combine the whole wheat flour, chopped fenugreek leaves, yogurt, oil, turmeric powder, red chilli powder, cumin seeds, and salt.

Step 2

Gradually add water and knead the mixture into a soft and smooth dough. The amount of water needed may vary, so add it slowly to achieve the right consistency. It is not good to have the dough overly dry or sticky. Let the dough rest for 10-15 minutes.

Step 3

Divide the dough into small, lemon-sized balls. Heat a griddle or nonstick pan over medium heat. Take one dough ball and roll it out into a thin, round flatbread (thepla) using a rolling pin and some dry flour to prevent sticking.

Step 4

Place the rolled thepla on the hot griddle. When you see small bubbles on the surface, flip it over and apply a little oil or ghee on the cooked side. Flip again and apply oil or ghee on the other side. Press the thepla lightly with a spatula to ensure it cooks evenly. Let cook until crispy and golden brown on both sides.

Step 5

Repeat the process with the remaining dough balls, rolling and cooking theplas one at a time. Serve the Methi Theplas hot with yogurt, pickle, or any chutney of your choice.
