Step 1

Preheat oven: Preheat oven to 375°F (190°C). Lightly grease a baking dish big enough to maintain the crammed peppers.

Step 2

Prepare the peppers: Cut the tops of the peppers and dispose of the seeds and membranes. If important, trim the bottom barely so that it stands upright within the baking dish.

Step 3

Cook the filling: Heat a small amount of olive oil in a saucepan over medium flame. Add the chopped onions and sauté until softened, about 3-4 minutes. Add the turkey to the pot and cook till browned. Proceed by breaking it up with a spoon.

Stir in cooked quinoa or rice, diced tomatoes, salt, and pepper. Cook for another 2-3 minutes until heated thoroughly. Remove from the flame.

Step 5

Stuff the peppers: Spoon the turkey and quinoa mixture into every pepper, filling to the brim.

Step 6

Baking: Place the crammed peppers upright in the organized baking dish. Cover the pan with foil and bake in the preheated oven for 15-20 minutes or till the peppers are tender.

Step 7

Serve: Once the peppers are cooked, remove them from the oven and allow them to cool a little. If desired, garnish with fresh parsley before serving.
