Steps

Step 1

Use cold water to rinse the lentils to get rid of any debris. Rinse the lentils and add enough water to a medium saucepan to cover the lentils by approximately 1 inch. Heat the water until it boils. Once the lentils are soft but not mushy, then you will reduce the heat to a simmer making sure to cook for 20 to 25 minutes. Remove any extra water.

Step 2

Heat a small amount of cooking oil in a different skillet over medium heat. When the onions are transparent, you will add the chopped ones and continue to sauté for a few minutes. Cook for a further two to three minutes, or until the red bell peppers and tomatoes are tender. Stir in the chopped tomatoes. Season the cooked lentils with salt, pepper, and ground cumin after adding them to the skillet. To integrate the flavours, simmer for a further five minutes after thoroughly mixing everything.
