Italian Almond Cookies

Italian Almond Cookies, also known as Amaretti cookies, are delightful gluten-free treats with a chewy texture and a rich almond flavour.

Step 1

Mix powdered sugar and almond flour in a bowl. Blend the dry ingredients until thoroughly blended.

Step 2

Beat the egg white in another basin until stiff peaks form. Mix the almond flour mixture with the beaten egg white, gently folding it in. After adding the almond extract, keep folding until a smooth, sticky dough is achieved.

Step 3

Preheat the oven to 325°F (160°C) and place parchment paper on a baking pan. Form tiny dough sections into balls by scooping them out. With room between each, place the balls on the baking sheet that has been prepared.

Step 4

As a decorative touch, press a few sliced almonds onto the top of each biscuit. Bake for 12 to 15 minutes, or until the edges start to turn a light golden colour, in a preheated oven. After a few minutes of cooling on the baking sheet, move the cookies to a wire rack to finish cooling.
