Colombian scramblеd еggs and or huеvos pеricos arе a tasty and colourful morning mеal that blеnds еggs with thе bright flavours and colours of grееn pеppеrs and onions and tomatoеs. Your tastе buds will bе transportеd to thе strееts of Colombia with this simple and quick dish. It's ideal for a filling brunch or brеakfast.

Step 1

Finely chop the onion, tomato, and green bell pepper. In a non-stick skillet, heat the vegetable oil over medium heat.

Step 2

To the skillet, add the chopped green bell pepper and onion. Sauté for about 2-3 minutes, or until they begin to soften and turn translucent. Stir in the chopped tomatoes and continue to cook for another 2-3 minutes until the tomatoes have softened.

Step 3

Once the eggs are cracked into a bowl, gently beat them with a fork. Transfer the whisked eggs to the pan containing the fried veggies. When making the eggs, season with salt and pepper to taste. Cook, stirring gently, until the eggs are just set. This should take about 2-3 minutes.

Step 4

Once the eggs are cooked to your liking, transfer them to a plate, and enjoy your delicious Huevos Pericos. They go great with a side of arepas, toast, or even fresh fruit.
