Steps

Step 1

First, you will put the onion, garlic, and ginger into a food processor to mix the ingredients. Give it a whizz around to smooth the paste in the food processor.

Step 2

Heat 1 tbsp of the oil in a flameproof casserole dish over a medium-high. Add the onion mixture and then you will fry it for 15 mins. Then transfer it into a bowl.

Step 3

Add the remaining oil and chicken to fry for 5-7 mins, or until it has turned lightly brown. Then stir in the tikka spice and cayenne. Fry for a further minute. Then tip the onion mixture back into the pan with the tomatoes and 1 can full of water. Then bring to boil and reduce to a simmer making sure to cook uncovered, for around 15 mins. Then stir in the almonds and spinach, cooking for a further 10 mins. Season, then stir through the yogurt and coriander. Serve with brown rice. Enjoy this delicious dish!
