Step 1

Heat a pot with 1 1/2 cups water until it boils. Stir continuously to prevent lumps as you gradually whisk in the instant polenta and salt. Reduce the heat to very low and stir for 5 to 7 minutes until the polenta thickens. After turning off the hob, thoroughly mix in the grated Parmesan cheese.

Step 2

Spread the polenta evenlyto a about half-inch thickness on a baking sheet coated with parchment paper. To set, let the polenta cool somewhat before putting it in the refrigerator for at least an hour.

Step 3

Increase the grill or grill pan's temperature to medium-high. The chilled polenta dough should be cut into bite-sized squares or circles using a cookie cutter or knife. Drizzle the polenta bits with olive oil on both sides. Cook the polenta for three to four minutes on each side, or until it turns golden brown and develops grill marks. Warm Grilled Polenta Bites can be served warm with more Parmesan or herbs on top if desired.
