Steps

Step 1

First, beat the eggs and season with salt and pepper in a bowl. Next, place one tablespoon of vegetable oil in a pan and heat it over medium heat. The beaten eggs should then be added to the pan, swirling the mixture to make a thin omelette. Cook till done, then take out of the pan and reserve.

Step 2

Next, add one more tablespoon of oil to the same pan. The cabbage, carrots, green onions, and bean sprouts should all be sautéed until just tender. Add the chicken or prawns, if using, and cook until done. The cooked omelette should then be added, broken up into small pieces, and stirred in with the sesame oil and soy sauce. Blend thoroughly.

Step 3

Place the egg roll or spring roll wrapper, corner facing you, on a spotless surface. Just above the centre, spoon the contents onto the wrapper. Tightly roll up, folding in the sides and the bottom corner over the filling.

Step 4

In a pan, heat the oil for frying. Seam side down, carefully drop the rolled egg roll into the heated oil. Fry until golden brown, rotating halfway through to guarantee uniform cooking. After that, take it out and pour the oil over paper towels to absorb any extra.

Step 5

After letting the egg roll cool for a minute, cut it into little pieces. Serve with your preferred dipping sauce, such as sweet and sour sauce, or use soy sauce with a small amount of rice vinegar added.
