Step 1

Prepare the Ingredients: Cut the tofu into tiny cube pieces. First, dice the onion and chop the garlic cloves.

Step 2

Sauté the Aromatics: Use a large skillet and heat a large amount of vegetable oil in it on medium heat. Next, sauté the onion and garlic till softened, after which the garlic should be mixed well with the tofu pieces.

Add the Spices: Throw the curry powder in and let the heat do its magic, cooking for about a minute.

Cook the Tofu: Place tofu cubes into the pan and mix gently with spices and onions to coat them with the ingredients. Add the coconut milk next, sprinkle salt and pepper to taste.

Simmer the Curry: Put the mixture on a simmer and reduce the heat to low. Let it simmer for approximately 10 minutes and stir occasionally until the tofu is warmed through and the flavors are mixed properly.

Step 6

Adjust Seasoning and Serve: Add more salt and pepper if seasoning is still not enough. Place the tofu curry hot in a bowl with the rice and garnish with some fresh cilantro if you wish.
