Easy Pea & Spinach Carbonara

This easy pea & spinach carbonara is a colourful twist on a classic Italian dish. This is a diabetic-friendly dish, packed with nutrients and rich vitamins that will refuel you in your day-to-day activities.

Step 1

Heat some salted water in a saucepan. Cook the pasta until all cooked, following the directions on the box. Reserve about 1/2 cup of pasta water before draining.

Step 2

In a bowl, whisk together the egg and grated Parmesan cheese. Set aside. Heat a light coating of olive oil in a pan over medium heat. Cook the chopped bacon till it becomes crispy. Add minced garlic and cook for another 1-2 minutes until fragrant.

Step 3

Add the cooked and drained spaghetti to the pan with bacon and garlic. Toss in the frozen peas and fresh spinach leaves. Cook for 2-3 minutes until the spinach wilts and the peas are heated through.

Step 4

Remove the pan from heat. Quickly pour the egg and Parmesan mixture over the pasta, tossing continuously to coat the pasta evenly. If necessary, use the pasta water that was set aside to get a creamy consistency. To taste, add salt and black pepper for seasoning. Serve immediately, garnished with additional Parmesan if desired.
