Steps

Step 1

If desired, wash and peel the cucumber. If you want more colour and texture, you can leave some of the peel on. Use a vegetable peeler to form ribbons from the cucumber, or slice it into thin rounds.

Step 2

Mix the sugar, sesame oil, rice vinegar, and soy sauce in a small bowl. Mix thoroughly until all of the ingredients are well blended and the sugar has dissolved. After tasting the dressing, modify the components according to your taste. To adjust for saltiness, sweetness, or acidity, you can add more sugar, rice vinegar, or soy sauce. Sesame seeds should be toasted for one to two minutes on medium heat in a dry skillet, or until aromatic and golden brown. Take them off of the heat right away.
