Steps

Step 1

Firstly, you will preheat your oven to 400°F (200°C). Secondly, place the cubed butternut squash on a baking sheet. Then drizzle 1 tablespoon of olive oil. Season with salt and pepper. Roast the butternut squash in a preheated oven for 25-30 minutes or at least until it becomes more tender and slightly caramelised.

Step 2

In a large pot, make sure to heat the remaining tablespoon of olive oil over medium heat. Then you will add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.Then add the roasted butternut squash to the pot along with the vegetable broth, the dried thyme and the ground cumin. Stir well to combine. Then you will bring the soup to a boil making sure to reduce the heat to low. Then let it simmer for about 15-20 minutes. The flavours will meld together.

Step 3

Then use an immersion blender or even use a countertop blender to puree the soup making sure the soup is smooth and creamy. Return the soup to the pot and heat it gently. If needed, adjust the consistency by adding more vegetable broth or water. Season with salt and pepper to taste.

Step 4

Serve the roasted butternut squash soup warm. Then you can garnish with a sprinkle of fresh thyme or even a dollop of Greek yoghurt, if desired. Enjoy the comforting and nourishing flavours of this Crohn's-friendly roasted butternut squash soup!
