Step 1

Place a large, heavy-bottomed pot with a lid on the stove over medium heat. Add the coconut oil to the pot and allow it to melt. Make sure the entire bottom of the pot is coated in oil. Put three popcorn kernels into the pot, cover it with the lid, and wait for them to pop. This is your indicator of when the oil is hot enough. Remove these test kernels once they pop.

Step 2

Add the remaining popcorn kernels to the pot, distributing them evenly. Sprinkle the curry powder and turmeric over the kernels. To make sure the spices are dispersed evenly, replace the pot's lid right away and give it a little shake. To keep the pot from burning, leave it on the stove and give it intermittent shakes. In a minute or two, the popcorn will begin to pop. Shake the pot occasionally more until you hear only a few pops every few seconds, then stop. This means that popcorn is about to be served. Take it off of the hob.

Step 3

Remove the lid with caution, being mindful of the hot steam. The popcorn should be coated in the fragrant coconut curry seasoning. Sprinkle with a pinch of salt to taste and give it a final gentle toss to evenly distribute the flavors. Transfer your Coconut Curry Popcorn to a bowl and enjoy while it's still warm and crispy.
