Steps

Step 1

In a big saucepan, warm the vegetable oil over medium heat. Add the grated ginger, crushed garlic, and chopped onion. Sauté for 2-3 minutes until fragrant and the onion becomes translucent. Add the diced carrots and sauté for another 2-3 minutes.

Step 2

Add the paprika, ground cumin, ground coriander, ground turmeric, and ground coriander paste and stir. Sauté for about a minute to release their flavours. Add the rinsed red lentils and give everything a good stir.

Step 3

Pour in the coconut milk and vegetable broth. Stir well. Add the can of diced tomatoes with their juice.

Step 4

After bringing the mixture to a boil, lower the heat to a low simmer. Let the soup simmer for about 15-20 minutes, or until the lentils are tender and the soup has thickened. Stir occasionally to prevent sticking.

Step 5

Add lime juice, salt, and black pepper to taste when preparing the soup. Adjust the seasoning as needed to achieve the right balance of flavours.

Step 6

Ladle the Coconut Curry Lentil Soup into bowls. Garnish with fresh cilantro or basil leaves.
