Steps

Step 1

Prepare Chocolate Tart Dough: In a food processor, mix all-purpose flour, unsweetened cocoa powder, cold butter cubes, and granulated sugar. Blend until the mixture is like crumbs. Add the egg yolk and stir until the dough forms.

Step 2

Add the ice water, 1 tablespoon at a time, stirring continuously until the dough is prepared. Flatten the dough into round balls, wrap it in plastic wrap, and refrigerate for at least 15 minutes.

Step 3

Preheat your oven to 375°F (190°C). Grease a tart pan with a detachable backside. On a slab, roll out the chilled dough into a circle slightly larger than the tart pan. Carefully place the rolled-out dough into the greased tart pan, and place it in the bottom of the pan. Trim the extra material from the rims. Bake the cake base.

Step 4

Line the base of the cake with baking paper and fill it with the cake weight to save the base from expanding at some point in baking. Bake the tart base in a preheated oven for 15 minutes. Remove the parchment paper and weight and bake for an extra 5-7 minutes, or till the dough is dry. Remove from the oven and permit the dough to cool completely.

Step 5

Prepare the chocolate tart filling. In a heatproof bowl, combine the chopped darkish chocolate and unsalted butter. Heat the cream in a small saucepan over medium heat till it begins to boil. Pour the cream over the chocolate and butter mixture. Let it sit for 1-2 minutes. Add the vanilla extract and stir the mixture till the chocolate and butter are completely melted and mixed. Assemble the cake and permit it to cool.

Step 6

Pour the chocolate filling into the cooled cake base and spread it lightly. Tap the tart tin on the slab to avoid any air bubbles. Place the chocolate cake in the fridge until the filling has set.

Step 7

Serve the chocolate cake: Once the chocolate cake has cooled and set, take it out of the fridge. If desired, garnish with shaved chocolate, cocoa powder, or berries before serving. Cut the tart into tiny pieces to serve.
