Steps

Step 1

In a small saucepan, heat the cherry brandy until warm but not boiling. Pour the warm brandy over the dried cherries in a bowl. Let them soak for at least 30 minutes, allowing the cherries to plump up.

Step 2

Preheat your broiler to 325°F (163°C). Oil a pudding bowl or heatproof bowl. In a medium bowl, filter together the flour, cocoa powder, preparing powder, and salt. In another expansive bowl, cream together the mellowed butter and brown sugar until light and cushy.

Step 3

Include the eggs one at a time, beating well after each expansion.Stir in the vanilla extract. Gradually fold in the sifted dry ingredients until well combined. Add the soaked cherries (including any remaining brandy), chopped dark chocolate, and breadcrumbs. Mix until evenly distributed.

Step 4

Transfer the pudding batter to the greased pudding basin or bowl. Cover the top with parchment paper and then foil, securing with kitchen twine. The pudding basin should be put in a deep baking dish. Add hot water to the baking dish, creating a water bath around the pudding basin.Heat within the preheated broiler for around 2 hours or until a toothpick embedded into the center comes out clean.

Step 5

Allow the pudding to cool for 10 minutes before removing it from the basin. Serve the chocolate and cherry Christmas pudding warm, dusted with cocoa powder, and optionally accompanied by a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy your festive dessert!
