Steps

Step 1

Marinate the chicken: In a bowl, mix the chicken with half of the Balti spice mix, chili powder, cumin, coriander, and a pinch of salt. Mix well to coat the chicken lightly. Let it marinate for a minimum of 10-15 minutes.

Step 2

Cook the chicken: Heat the vegetable oil in a Balti pan or huge skillet over medium heat. Add the marinated chicken to the skillet and fry until golden brown on both sides, about 5-7 minutes. Remove the chicken from the pan and set aside.

Step 3

Prepare the sauce: In the same skillet, add a bit extra oil if needed, then add the chopped onion and cook until it’s softened approximately 5 minutes. Add the minced garlic and grated ginger and cook for every other 1-2 minutes till fragrant.

Step 4

Add the last Balti spice blend and prepare dinner for 1 minute to toast the spices. Add the chopped tomatoes to the pot and cook until the tomatoes break down and produce their juices, about 5 minutes.

Step 5

Mix and simmer: Return the cooked chicken to the pot and stir to coat with the sauce. Reduce the warmth and simmer the chicken balti for 10-15 mins till the flavors blend and the sauce thickens slightly. Season with salt if favored.

Step 6

Serving Instructions: Garnish the chicken balti with clean coriander leaves and serve warm with naan, rice, or roti.
