Step 1

Once the eggs are cracked into a bowl, add salt and pepper, and beat them until well combined. The olive oil should be warmed over medium heat in a nonstick pan.

Step 2

Fill the heating skillet with the beaten eggs, swirling to ensure an even layer. As the edges set, gently lift them using a spatula to permit the uncooked egg to slide under. When the tops of the eggs are mostly set but still a little runny, add cherry tomatoes, mozzarella, and fresh basil on one side of the omelette.

Step 3

Forming a half-moon, delicately fold the remaining omelette over the filling. Simmer one more minute to melt the cheese and heat the tomatoes. Slide the Caprese omelette onto a plate and garnish with extra basil if desired.
