If craving a sweet treat or dessert then banana bread is the perfect choice during any time of the day. It is a healthy delicacy that has a sweet kick to it with the banana and the icing. Delicious banana bread is a must-have for a treat during your day or as a dessert for after dinner.

Step 1

Firstly you will heat the oven to 180C/160C fan/gas 4. Then you will butter a 2lb loaf tin. Make sure to line the base and sides with baking parchment. Then you will cream 140g softened butter and 140g caster sugar until light and fluffy. Slowly add your 2 beaten large eggs with a little of the 140g flour. Then you will fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.

Step 2

Moreover, you will pour the mixture into the prepared tin. Then you will bake for at least 50 minutes or until cooked through. Make sure to check the loaf at 5-minute intervals from 30-40 minutes in the oven. The technique used for testing it is cooked is to use a skewer which should be able to be inserted and removed cleanly. Furthermore, let it cool in the tin for 10 minutes and then you will remove it to a wire rack

Step 3

Then you will mix 50g icing sugar with 2-3 tsp water creating a runny icing so it can be easily spread on the Banana Bread.

Step 4

Then you will drizzle the icing across the top of the cake and get a handful of banana chips to decorate this delicious and healthy Banana Bread.
