Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and trim the eggplant. Slice it into 1/2-inch thick rounds. You can peel the eggplant or pull the skin for added texture if desired.

Step 3

Mix the eggs in a separate basin. Grated Parmesan cheese and breadcrumbs should be combined in a separate bowl. Dip each eggplant slice into the whisked eggs, ensuring it's fully coated, then dredge it through the breadcrumb mixture, pressing gently to adhere to the coating.

Step 4

Put the breaded eggplant slices on a baking sheet lined with parchment paper. Bake in the oven for about 20-25 minutes or until the slices are golden brown and crispy.

Step 5

Warm the marinara sauce and serve it on the side for dipping, or drizzle it over the baked eggplant slices. Garnish with fresh basil leaves if desired.
