BAKSO - Indonesian Meatballs

Step 1

You need a Food Processor

Step 2

Combine mince beef with all the seasoning into a food processor then blend it

Step 3

Add the ice cubes then blend it it again 2 times until the ice is cube well combined

Step 4

Finally add the tapioca flour, blend it again 2 more times until the mixture really smooth and all the ingredients well mixed

Step 5

Using gloves to shape the meatballs, scoop off with a teaspoon by squeezing the mixture a few times between your thumb and forefinger until smooth. The meatballs should be the size of a ping pong ball

Step 6

As the raw meatballs are shaped place them into a large pot of hot boiling water but don't turn on the stove until all the meatballs have been finished and added and only then bring it back to the boil. Make sure none of the meatballs stick at the bottom. They will float once they’re cooked through which should take around 15-20 minutes

Step 7

After cooking, place them the meatballs cooked straight into iced cold water and let them cool down. This technique helpss the meatballs retain their texture and more firmness

Step 8

Serve with egg noodles, vermicelli, bean sprouts / pokchoy in the beef broth soup then garnish with chopped chives, chopped parsley, fried shallots, squeeze of lime & chilli sauce
