Steps

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil and set apart.

Slice the eggplant into ¼ th-inch thick rounds. Sprinkle both sides of the eggplant slices with salt and let them take a seat for approximately 10-15 minutes to draw out extra moisture. After that pat the eggplant slices dry with paper towels to put off the extra salt and moisture.

Step 3

Place the eggplant slices in a single layer in the prepared baking dish. Apply marinara sauce over every slice, masking them properly.

Step 4

Sprinkle shredded mozzarella cheese over the marinara sauce, accompanied by using grated Parmesan cheese.

Step 5

Season with a pinch of salt and pepper to flavor. Bake inside the preheated oven for approximately 10-15 minutes, or till the cheese is melted and bubbly and the eggplant is soft.

Step 6

Once cooked, dispose of the Eggplant Parmesan from the oven and let it cool barely earlier than serving. Garnish with sparkling basil or parsley if desired, and serve warm.
