Step 1

Preheat your air fryer to 375°F (190°C). Peel the beet and slice it into 1/4-inch thick rounds. Put the slices of beetroot into a basin.

Step 2

Drizzle the beet slices with olive oil, ensuring each slice is well-coated. Sprinkle garlic powder, salt, and pepper over the beet slices. Toss them gently to evenly distribute the seasonings.

Step 3

Arrange the seasoned beet slices in a single layer in the air fryer basket. It could be necessary to work in batches to prevent congestion. Air fry the beets at 375°F (190°C) for 12-15 minutes, flipping them halfway through. Cook until the edges are crispy and golden.

Step 4

Once the beets are crispy and cooked through, remove them from the air fryer. Transfer the air-fried beets to a serving plate and sprinkle crumbled feta cheese over the top while they're still warm. Garnish with freshly chopped parsley for a burst of colour and freshness.
