Steps

Step 1

With cool water, rinse the quinoa. Add the water (or veggie broth) and quinoa to a medium-sized pot. Once the quinoa is cooked and the liquid has been absorbed, simmer for about 15 minutes while covering and reducing the heat to low. Let it cool for some time.

Step 2

Combine the lime juice, olive oil, chili powder, ground cumin, salt, and black pepper in a small bowl. Adjust the seasoning to taste.
