Step 1
Firstly you will use a blender or a food processor, to then puree the diced mango until it is smooth in a mixing bowl. Then combine the mango puree, coconut milk, chia seeds, honey or maple syrup (if desired), and vanilla extract. Stir well to combine.
Step 2
Then let the mixture sit for around 5 minutes and you will Stir again to evenly distribute the chia seeds. Make sure to cover the bowl and refrigerate for at least 2 hours or overnight. This will allow the chia seeds to absorb the liquid creating a pudding-like consistency.
