Venezuelan Ceviche - Rompe Colchón

Description

The health elixir, and delicious light lunch is called Rompe colchón in Venezuela which means "break the mattress" due to its high vitamin content. Poached seafood marinated in a spicy and fresh marinade best served with corn tortilla chips.

Steps

Step 1

Deshell and remove vien from Prawns

Step 2

Clean and gut Squid, cut into rings and remove beak.

Step 3

Bring two pans of water to boil, blanch the squid for 3 minutes and leave to cool, then blanche the Tiger Prawns for 3 minute's and let cool. In the other pan, steam the mussels untill the shells have opened and discard any that haven't.

Let's all the seafood cool while you make your marinade. Start with veggies brunoise (finally dice) your onions and peppers.

Then mix all the remaining ingredients together with the seafood and let marinate for 30 minute's so the citric acid cooks the seafood fully.

Plate up with squid and mussels and top with beautiful prawns. Then garnish with some chiffonade corriander (cut finely into robins) and some lime wedges. Absolutely delicious summer lunch serve with some corn tortilla chips. Sorry if you break your mattress. 😅
